Flapjacks
I haven't been feeling my best this week as I have Covid, so thought I'd keep it simple by making flapjacks for the first time. To prevent any possible contamination, after they were baked my mum did the honours slicing, dividing, and placing them in a container, so the whole family could enjoy them.
I purposely found a 'chewy' flapjack recipe as, to me, they're the best kind!
It was taken from 'Baking with Granny'.
Prep: 30 mins
Cook: 20 mins
Total Time: 50 mins
1. Pre-heat the oven to 180°c (160°c fan) and line a baking tray (I just used a large flat one).
2. In a pan, melt the butter, golden syrup and sugar – stirring regularly.
3. In a large bowl, mix the oats and cinnamon then stir in the melted mixture until all oats are thoroughly covered.
3. Transfer the mixture to your pre-lined/greased tray and smooth/flatten until it's about 1cm thick.
4. Bake or about 20 minutes, until the edges are lightly golden and the middle still has a "slight wobble".
5. Leave to cool a little then score with a knife where you intend to slice them.
6. When fully cool use a sharp knife to press down and separate into slices.

7. After dividing, I chose to put some of the palest ones back in the oven for 5 mins to brown the edges. You don't have to do this but I'm a perfectionist 😂
