Coffee Biscuits
This week I baked some coffee biscuits I found in my favourite cook book. I've made them before and they were so nice I thought I'd make them again.

Ingredients
For the biscuit
2 tsp coffee
1 tsp boiling water
75g butter (room temp)
50g granulated sugar
125g self raising flour
For the filling
2 tsp coffee
2 tsp boiling water
50g butter (room temp)
100g icing sugar
Method
1. Dissolve the coffee in the boiling water. Beat the butter and sugar together in a mixing bowl until pale and creamy. Add the dissolved coffee then gradually mix in the flour to make a smooth dough.
2. Shape the dough into a log then chill for 15 mins. Slice the chilled log into 20 even pieces. Roll each piece into a ball and arrange on 2 greased baking sheets and slightly flatten with a fork.
3. Bake in a preheated oven, 180.C, 160.C fan, Gas 4 for 8-10 minutes till browned. Leave the biscuits to cool for 5 mins then transfer to a cooling rack to cool completely.
4. Make the filling. Dissolve the coffee in boiling water. Beat the butter and icing sugar together then stir in dissolved coffee until smooth and fluffy. Use to sandwich biscuits together in pairs.
