Pear, Sultana and Cardamom Loaf

This week I baked this loaf. I've baked this before and it was really nice so I did it again for my blog. I improvised and added some apples because I was short of pears and added cinnamon because I had no cardamom.

Ingredients:

125g unsalted butter
125g light soft brown sugar
2 eggs
250g self raising flour
1 tsp ground cardamom
4 tbsp milk
500g pears peeled, cored, chopped
125g sultanas
1 tbsp honey 

Method

1. Pre-heat oven to 160.C, 140.C fan, Gas 3. Line a 1 kg loaf tin with baking paper.

2. Beat the butter and sugar together in a mixing bowl till creamy and pale. Gradually beat in the eggs until fully incorporated. Sift in the flour and ground cardamom and mix in. Then add the milk to get a smooth creamy mixture.

3. Reserve around one third of the pear slices and roughly chop the rest. Fold them into the mixture with the sultanas. Spoon the mixture into the prepared loaf tin and if needed spread evenly. Arrange the reserved pear slices evenly along the centre of the loaf pressing them in gently.

4. Bake in the pre-heated oven for 1h 15m - 1h 30m or until an inserted skewer comes out clean. Remove the cake from the oven and leave to cool in the tin for 10 mins. Then loosen the edges and lift out of the tin and transfer to a cooling rack to cool completely.

5. Drizzle on some honey
